Christmas Turkey Noodle Soup

Faced with a mound of turkey, brussel sprouts, and carrots and just the family to feed, today's Boxing Day lunch has been Turkey Noodle Soup.  I had a quick google but found nothing to my liking so just did what came to mind.  But as it was a success with all, I had better write it down.

The ingredients below are what I had to hand, but use any roast meat, and raw or cooked veggies that you discover in the fridge or freezer

Serves 4-6

A big handful of cooked turkey meat (or any roast meat)
A handful of shredded cooked brussel sprouts & carrots (or leeks, frozen sweetcorn, mixed veg etc)
1l water
Chicken stock cube
Onion, finely chopped
Garlic, finely chopped
Fresh ginger, finely chopped (optional)
Star anise (optional)
2 tbsp Oyster Sauce (optional)
2 tbsp soy sauce
1 tbsp sesame oil
Pinch of chilli flakes
4 layers medium egg noodles

Gently fry the chopped onion and garlic in a large saucepan whilst you dice the cooked meat.  Add the meat to the frying onions and the ginger.  Add the water, stock cube, and star anise if using. Bring the pan to the boil with the lid.

When boiling, turn the heat down to a simmer and add the diced/shredded vegetables.  Put the lid and add bring back to the boil.  Add the noodles, poke them under the liquid, put the lid back on and leave to simmer for 5 minutes.

When the noodles are soft add the flavourings to taste.

Serve in big bowls with drying up cloths securely fastened around your little ones as splatter guards.
